Since its opening, aspiring brewers, corporate groups, and average customers have utilized Tattered Flag’s “Brew Your Own” system to create custom beers for a variety of purposes.
The next Pop-Up Happy Hour at Strawberry Square on June 21 features Tattered Flag, and we reached out to their team to see if we could create an exclusive beer for the party.
Y’all know I’m a hophead, but I wanted something refreshing and fun for the first day of summer. I was inspired by one of my favorite seasonal cocktails at the old Scott’s Grille: Strawberry Basil Black Pepper in a session-friendly pale ale.
Luckily for me, Tattered Flag’s Brewers, Tony and Dave, loved the idea and mapped out a recipe for us ahead of our brew day.
We kicked off the brew day with pizza and a round of Tattered Flag beers to fuel up.
Tony started things off with a brief explanation of the brewing process (disclaimer: This was neither Jimi’s nor my first time brewing, so we got an abbreviated version). Intern Jimi was charged with adding the grain to the water while I wielded the paddle to keep the mixture from balling up.
While we waited for the next step in the brewing process (the boil!), we tried more Tattered Flag beers and toured the building. I hadn’t been upstairs since opening, so it was fun to check out the progress. Tony kept handing out samples of their latest creations, but the consensus favorite was the TMI PA.
Honorable mention goes to the ghost pepper-jalapeno hefeweizen.
The “Strawberry Pop-Up Pale” (Uh, help us name this!) is going to be a low-IBU pale ale. It was brewed without adding (bittering) hops during the boil — a new process Tony is experimenting with — to highlight hop flavors with minimal bitterness.
We added Citra, Mosaic and Mandarina Bavaria hops to the whirlpool stage, and the beer was later dry-hopped with even more Citra and Mandarina Bavaria.
This hop combination should give the beer a fruit-forward flavor and an earthy and fruity aroma. Strawberries, basil, and black pepper (Don’t worry, guys, we didn’t make this one fiery) were added during fermentation.
I can’t wait to try this beer. It should come in just under 6% ABV, and we hope it’ll be great collab to highlight Strawberry Square and the start of the summer season!
