Bacon always tips the scales for me when I am deciding between items on the menu. If the dish includes bacon, I will most likely be ordering it.
But where in town can you find the best bacon?

In my brunch pursuits, I was on the hunt for the restaurant that put a little more sizzle into their bacon. My answer: the new-ish Koda featuring vintage American cuisine nestled right in the Union Station development close to my neighborhood.

Koda opened earlier this year under the leadership of Christian DeLutis. DeLutis has an impressive background, known well locally from his tenure at Tröegs Independent Brewing. He also was voted Baltimore Best Chef in 2010 and received a 5/5 star review from the Baltimore Sun.

DeLutis has put together a deep bench of talent with Chef Devon Ream, Pastry Chef Kyle Komada and House Mixologist Billy Houck.
Koda puts a lot of intention behind their food, which changes seasonally and is locally inspired. When you visit the restaurant, expect to have some great interactions with the staff and watch the action happening in their open kitchen. As a particularly special touch, Koda offers a complimentary pastry at brunch — my sweet tooth delights at the mention of sweets.
The bacon
Slab style bacon – meaty, smokey, crisp and tender.
Koda cures their own bacon in a wood smoker to attain this incredible taste and texture.

Quality breakfast meats pepper the menu — Canadian bacon made from pork loin; housemade scrapple uses beer in the mixture; housemade breakfast sausage includes a mix of pork, ginger, sage, maple, and pink peppercorn.
Meat lovers can find their home at Koda. Beyond the above, they also feature a pig roast every Sunday.
Back to bacon: The delicious slabs are a theme throughout the full Koda menu, including a dinner BLT and an appetizer that is eggs and bacon with a breakfast aoili (a tangy mix of coffee, OJ and Tabasco).
Koda tops the list when it comes to bacon and breakfast meats. From their fresh-baked breads to their cocktail menu, Koda offers an overall amazing experience and a standout among local options.
